Making Rye Berry Jars
I cribbed this from the internet a couple years ago…
Prep Rye Berries for mycology
No Prep Method
For each quart jar:
- 400ml dry rye iberries (about 310 g more or less)
- 225ml water
PC for 90 minutes at 15#
Soak Method
Soak 16-20 hours. Drain.
Add to new pot of water and boil for 15 mins starting timer when the boil starts.
Dump into sieve, dump sieve onto big towel.
Spread out in a thin even layer.
I dried them on cookie sheets first…
Then I used a towel. You want a towel tat isn’t too plush. The berries can get caught in the plush and it’s a hassle if they dry like that.
Wait 5 mins and stir them up and spread flat again.
Wait 5 mins.
Add to bags or jars and fold/cap. For jars, leave room at the top for shaking, perhaps 2/3 full
Sterilize at 15psi for 2.5hr
You’ll want to cover the lid in aluminum foil to keep extra moisture from seeping into the jars.
You can get fiber disks that fit in normal metal rings.
If you use plastic lids, you can easily fit 9 jars as long as the top ones are soaked.
I’ve found that I can stack 10 jars as long as the top ones have metal lids. The ones on top should be soaked, not dried.
To close the pressure cooker, line up the arrows.
And now we cook.
